Jeepers Terry You need to sort out some proper cold smokin' for those darlin's I could get you started on the cheap and show you how to build a good cold smoker. I've built a few cold smokers over the years. The last one I used for 10 years before I moved house. A hot smoker takes a little more thought as you need V accurate temp. control for best results. It is however, very doable. Once you have your smoker, and of course, learn how to use it, the most crucial thing is to ensure you have the best possible materials. You must also learn how to judge the quality and condition of your food through all stages of production, allowing you to adjust each process and achieve perfection. I've been out of this for a few years, and historically my main interest is in cold smoking, and I'll gladly pass on any tips you may need. Personally, I would avoid the tin pot, gimmick smokers other than perhaps for a Barbie do, just as a change. Smoking history, tells that smoking was all about preservation of food in a palatable form without the need for refrigeration or freezing. Indeed the later weren't available when the processes were developed. Initially I understand it was used and developed to enhance the flavour of cured and pickled food after accidental discovery. There was then the realisation that smoking further extended the shelf life of the produce. Smoking therefore, is only one part of the preserving process, yet the one always referred to. Curing through dry salting, brining or pickling is always used as the primary method of moisture reduction, which is an essential part of the wider preservation process. Air drying after curing is sometimes used before cold smoking and further processes may be used such as cooking or cooking in a Smokey atmosphere, i.e. hot smoking (but not always). Each process reduces moisture and/or imparts a preserving agent (salt, spice, condensed smoke etc). Oops! I'm wafflin' If you are serious about it there

toerag. Tell me about keel band problems! I bought a Souter Mi 21, mit 130hp Volvo TD, late summer, and have been slowly putting things together. We have covered most issues by asking the wise ones from the club about areas I'm a little sketching on. (that's most things ). We noticed from the start that the keel band is a bit crumbly in places, and will need replacing with a proper job in time. What can you tell me about this issue please? Wedger

Adam, I've not done any miles on 'Otter' yet, but from two years searching, trialing, testing and pu ing, I'd say give this one a close, close, CLOSE, look . I know 'Otter' is an early example, and despite her relatively bland, workman like looks, she can be appreciated from the sheer robustnessness. This hull just screams 'seaworthy'. T

Rich, Nope......................... certainly not as we stand. I need to get this repaired for work here as well, and for the sake of the chap who let me have it on permanent loan. He said he will never use it again, but that's not the point! (If it works praps I'll speak nicely to the board and see if they will let me have an advert or two for a loan of kit whenever needed). I just need to wait and see what chappy in Cornwall says . Hope we have

All We use a lightweight 'Reef-Pro' glove on the fish farm, which is part neoprene part leather. I've used them fishing some time ago and found them quite good. Also used the lightweight from Snowbee. OK but didn't seem to breath so well. I'll get a price on Reef-Pro if anyones interested. Wedger

I looked at two jet-drive powered craft before I bought Otter (has leg). All the advice I was given actually lead me away, or should I say not so tunnel visioned toward a jet. Yes certainly very versatile and manoeuvrable. You can spin one on a sixpence at full power hover over a wreck, creep into very shallow water, stop quickly 'cos there's no gear change. However, a real good look at second-hand jets are vital. Those that have been used for their designed purpose i.e. shallow water work tend to inhale some pretty thick water from time to time which can cause knackerization within the jet. I trialed an Mi 21 Souter with 165hp and jet that was advertised as, cruises 20 kn. dash at 30 kn. We managed about 14 kn., just sitting up but nuts falling off. dodgy jet . There are a few websites that discuss drive and power efficiencies have a search. I recall the basic thrust of the argument was 'the less............ the more' Less metal between the power source and the water, the more efficient. Shaft came out tops, followed by out-drive leg, followed by jet. The only argument I didn't really get to the bottom of was the drag factors for each drive system used with the same hull and engine.

All, Just sent my 'Bino Scope' off to Meiji for repair. Has anyone got a Nikon Coolpix 4500 digital camera? this is the one - I'm told by Meiji - that will adapt easily to the scope for recording scale images. We will either need a loan unit or I will purchase one. What do you have? Wedger.
